Shopping Around The World - Pumpkin


We are excited that the Lady got her act together and shopping around the world was actually something Lady can cook (thanks Phenny for picking something in her wheelhouse!).  For those of you who don't cook, if Lady can make this it is super easy. 

You need:
Stock/Broth - Lady likes to use vegetable as she is eating less meat.
Pumpkin - Lady is way to lazy to cut up a pumpkin so she buys a can of filling. She gets 100% pure pumpkin.
Cream - Lady uses a can of coconut milk instead because she is on a low dairy diet.
Garlic (optional) - Lady has already minced garlic (that is how lazy a cooker she is)
Curry paste or other spices - Lady likes a little curry paste for kick
Salt - a dash will do
Onion - Lady used about half the onion - she is picky about how she likes her onion (man as we write this we see how complicated all her food stuff is)
Oil - Because she loves it and it is healthy she used avocado oil this day, but you can use whatever you have

Here is how to make it:

Dice the onion and brown it in a pot with the oil. This is the hardest step we promise. 


Dump in all the other ingredients.



Stir and let simmer. Lady usually simmers it for about 30 minutes.


There you have Lazy Lady's pumpkin soup! 

Lady didn't get all the prices but she guesses the whole pot was about $10 Canadian (the pumpkin, the coconut milk and stock each being between $2-$3 plus the little bits of the other stuff she had). The pot makes up 4 lunches for her, so that is like $2.50 per serving (or $1.98 US and 1.68 Euros at the time she prepared this post!)

  13. We have never had Pumpkin Soup... butt we LOVE some plain Pumpkin globbed onto our supper Kibble. We think the Soup would be even Tastier.

  17. Pumpkin soup is a winter staple in Oz. Never tried coconut milk/cream before. Sounds great. We like a bit of ginger in it. And we have to cook the pumpkin...no tinned. Some people just hollow out the pumpkin, put the ingredients in and bake until it is soup.
